New Bike (2019) and No Clue on Suspension

Hello, I just bought a 2019 CBR600RR, and my question is regarding suspension setup. What sequence do I follow? Sag first? What SAG numbers am I looking for (front/rear) with 200 lbs rider?

It'll be "mostly" a Track Day bike, just like the old CBR it replaced, but an old friend (now deceased) set up my old one. I've been riding Intermediate class at Mid Ohio, Putnam, and Gingerman for the last few years. I'm an old timer (over 65) who switched from motocross to street about 10 years ago.

Any help with setting numbers is welcome. I can set the Compression and Rebound to stock and try to work from there, but don't know the Sag numbers. If anyone has some preferences and good start points, I'll take those also.
